Picked up some rockfish for the first time and came here for recipes with ingredients on hand. Had most, though not all fresh…or dry. But no crab in the house. But, I did have scallops. So I made this stuffing by chopping up scallops in lieu of crabmeat. Decidedly delicious! Had 30 oz of fish and too much stuffing so placed remainder on top. Baked about 8 min longer than suggested, then broiled for about 2 more. Not as flaky as the cod we are used too (cape codder) but a delicious meaty fish and the stuffing recipe is spot on for a flavorful dish. It was gone too fast…missed my pic opportunities.
First time cooking rack of lamb. I like this method, it’s my preferred way for great steaks as well. I used seasoning from the ‘Garlic Prime Rib’ recipe instead of what’s listed here, because I was making that, too, and had plenty enough left to rub the lamb down with. And it came out perfectly done. Everyone loved it.

This was very good. I added about 1/2 tsp ground coriander just because I’m a nut. This is great with or without. Either way it’s a winner thanks for sharing!
This a great easy and basic avocado and egg recipe. You can substitute whatever spices you like, Brazilian steakhouse or spicy Montreal steak for instance ??. I missed the part about carving out some avocado for the egg to fit...noticed right away. On that note, I’d butter or oil the dish a little to ease clean up, but it left a little treat for after the avocado was done. Cooked mine in the toaster over for about 15 m at 425ish and then broiled for a few minutes. Added a nice crisp/crunch to the egg, which I enjoyed. Would also probably add a little seasoning to the avocado first too, but it was fine. It’s avocado and egg. You know what you’re getting lol. Will do again and play around with it, because I can. Good stuff ??
Fantastic! Seasoned chicken with salt, pepper and ground jalapeño pepper and set in crockpot on high for about 4 hours, then shredded, added a heaping gm tbsp of chopped garlic and set to low for an hour. Used whole pound of bacon, 2 cups cheddar and fresh jalapeños. Came out awesome! Sour cream, lettuce and salsa for condiments and all the bases were covered. Enjoyed by all!
